Does the AEM X-Series oil/fuel pressure gauge include the pressure sensor?

Yes, the gauge kit includes the pressure sensor. The sensor has a 1/8" NPT thread; if you plan to fit it to an oil sandwich plate or adapter with a different thread, check the thread first or ask us for a suitable adapter.
